Recipe: Oven Toaster Salmon

We all know how healthy salmon is and it so healthy and delicious (how rare!), packed with omega 3 fatty acids and protein.

This is my favourite way of preparing salmon at home because it is so easy, super delicious and there’s virtually no mess to clean up. It is paleo friendly too! The only easier method would be to have your salmon raw but sashimi grade salmon isn’t available everywhere…

Served with baked shiitake mushrooms, eggplant and pine nuts over a bowl of quinoa.

I’ve been using this method for a while now but never thought there would be a need to share the recipe because there isn’t really any recipe! It was just something I randomly came up with to avoid frying my salmon (which would result in a lot to clean up) or sous vide-ing it (because I don’t have the apparatus, and it would take too long).

Oven Toaster Salmon

Ingredients:

  • Salmon (about 100g)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • A pinch of sea salt
  • Thyme
  • Paprika

Method:

  1. In a plastic bag, add all ingredients and coat salmon evenly
  2. If the piece of salmon is thicker in the center, cut a slit halfway for even cooking.
  3. Bake open in oven toaster for 7-8minutes
  4. Serve

Tip:

Other vegetables take about 15 minutes to roast. Leave some space and add in the salmon when the timer has 7 minutes remaining to shorten entire cooking time.

Salmon is something so delicious but is so often offensively overcooked. Salmon, like beef, can be cooked to medium – medium well actually. It is not necessary to cook it thoroughly. 7-8 minutes in my oven toaster gives me my desired doneness!

So my inspiration for this was actually ceviche – where you “cook” or cure seafood in citrus juices. It helps give my salmon a very nice evenly pink colour!

The other “secret” to nice texture salmon is when the white protein doesn’t ooze out. To achieve this, I add a bit of sea salt to the marinade and this keeps the white part in while cooking.

For reference, the oven toaster I am currently using is by Cornell. It is availanle at a very low price at electronic shops so everyone should get one if you don’t already have an oven toaster at home.
