I first tried the banana pancake recipe a while ago and have been making it whenever I feel like having pancakes. It’s easy, simple and absolutely healthy. After locating coconut flour in Mustafa, I can finally make a coconut version! The recipe is basically the same as the almond flour version, replacing the flours.
I blended 1 ripe banana and 2eggs in a food processor for a smoother batter. Forget about whisking.
Added about 30ml of coconut flour and a pinch of baking soda, sieved.
The pan was greased with my favourite coconut oil. For pancakes, medium low is ideal and the pan should not be too oily.
Finally, I topped it with some of my favourite toppings! I received a personalized jar of Nutella so why not? This makes it non Paleo but a little won’t hurt. It went well with my desiccated coconut, toasted coconut chips (from Mustafa) and toasted hazelnuts.
