Overnight Oats

Healthy and clean eating doesn’t just happen. You got to make it happen by:

  1. Stocking up your pantry with the relevant ingredients – some things you normally won’t have at home like berries, oats, nut milk, raw nuts, chia seeds, coconut crisps, coconut oil etc.
  2. Putting in effort to prepare the meals – while certain things can be eaten as it is like banana, some things have to be made ahead of time like example, granola.

I’ve been rather lazy lately and thus been reaching out to whatever is available instantly whenever I’m hungry. I could see negative impact on myself physically, emotionally and mentally, so I finally decided to start being diligent again and make healthy meals available.

I’m not a morning and breakfast person, but if you are, you can prepare something healthy the night before so there’s no excuse to resort to convenient bread or cereal when you’re rushing to get out of the house.

Overnight oats, as the name suggest, can be prepared overnight and you just have to top it with toppings you like in the morning and you’re good to go!

For those who eats on the move or wishes to bring this out, you can actually made it in containers for easy transportation. Here I reused a jar which once belonged to something else which is both pretty and a convenient container for it because it comes with a lid!

Though this looks like breakfast food, you can actually have it anytime of the day whenever you need a healthy snack. I’ll be experimenting with new flavours so watch this space for new recipes soon.

Peanut Butter and Banana Overnight Oats

  • 1/2 Cup Nut Milk
  • 1/2 Oats
  • 2 tbsp Peanut Butter
  • 2 tsp Honey
  • 1/2 tsp Vanilla Extract
  • 1 tbsp Chia Seeds

Mix everything together and keep in a container in the fridge overnight. You can add more milk if you wish.

I used homemade cashew nut milk, Adam’s Peanut Butter (no sugar or palm oil added, just pure peanuts and salt!), Origin’s Organic Raw Honey and Cowhead Organic Rolled oats.

Toppings

  • 1 ripe banana
  • A handful of blueberries
  • Homemade granola
  • Thai coconuts crisps

The toppings are entirely up to you but this is what I used. Recipe for homemade granola can be found here.
